Spaghetti al Pesto (Dairy)

serves 6

3 cloves garlic
2 tablespoons pine nuts
36 basil leaves
½ cup grated parmesan cheese
¾ cup olive oil
salt and pepper
1 pound linguini

Place the garlic and pine nuts in the bowl of the food processor and process until finely ground. Add the basil leaves and process until the basil is in very tiny pieces. Add the parmesan cheese and process again. Scrape down the bowl and process again for a few seconds. While the machine is on, pour the olive oil in slowly until it is all mixed in. Add salt and pepper to taste.

Cook pasta al dente. Drain and immediately toss with the pesto sauce and serve.
