Roasted Brussels Sprouts (Pareve)

Serves 8
2 pounds brussels sprouts
2 tablespoons olive oil
Fresh ground black pepper
Salt to taste
Preheat the oven to 450F. Cover a rimmed cookie sheet with foil. Trim and halve the brussels sprouts and place on the covered sheet. Add the oil, a generous amount of pepper and a little salt and toss to coat.
Roast for 20 minutes or until fork-tender. Remove from oven and add a little more salt, to taste.
