Cheese Borekas (Dairy)
makes 18 borekas
1 package frozen puff pastry squares or 2 sheets of pastry from a 17 ounce box, thawed for 30 minutes and each sheet cut into 9 squares
8 oz. feta cheese
½ cup cottage cheese
½ cup shredded or grated parmesan, cheddar, gouda or gruyere cheese
3 eggs
white pepper to taste
2 tablespoons sesame seeds, optional
Preheat oven to 400°F. Cover a baking sheet with parchment paper. Remove the frozen pastry from the freezer. In a medium bowl, mash the feta cheese with a fork. Mix in the cottage cheese and other cheeses, 2 of the eggs and white pepper. Take one square of dough and place 2 tablespoons of filling into the center of the dough. Dip your finger in water and wet all the sides of the pastry. Fold over one side of the pastry to make a triangle and press together tightly to close. Place on the prepared baking sheet. Repeat for the other pastry squares.
Beat the remaining egg and brush the tops of the pastries. You can sprinkle sesame seeds on top, if desired. Bake for 25 minutes or until golden.
